Hi hi hi! How are you? Did you have an amazing long week-end full of summery weather, barbecues and fireworks?
We did…minus the fireworks. Unfortunately it gets dark here in Calgary at about 10:30 pm, and there was NO chance we were keeping Kai up that late to watch the 11 pm fireworks show.
But that’s OK, because we had great weather, lots of deck-lounging, and LOTS of meals cooked on the barbecue. I hope you are loving all the grilled food (seems like you definitely liked these Enchilada-Stuffed Grilled Portobellos), because today I have another one for us. Yay!
And one of the best parts of these chili lime chicken skewers is that they are FULL of veggies, too, making it super easy for us to fill half our plates with fruit and vegetables!

But back to these chili lime chicken skewers. They are SO tasty, and incredibly simple to prepare. Simply toss the chicken in some olive oil and lime juice with brown sugar, salt and chili powder.
Then skewer them with some rainbow shades of red onion and bell peppers. Grill. And serve with a sweet and smooth mango sauce.
The combination of the sweet mango sauce with the savory chicken is pure heaven, and no one needs to know how EASY this was to make!
We served ours with some grilled sweet potatoes. The perfect, easy summer dinner recipe and it fills half your plate with fruit and veggies. WIN!

- 2 chicken breast, cubed
- 1 tablespoon olive oil
- juice of half a lime
- 2 teaspoons chili powder
- 2 teaspoon brown sugar
- 1 teaspoon salt
- 2 bell peppers, cut into cubes
- 1 red onion, cut into large chunks
- 1 mango
- juice ½ lime
- ¼ cup water
- 3 tablespoons brown sugar
- Heat grill to medium-high.
- In a large bowl, stir together the chicken cubes with the olive oil, lime juice, chili powder, brown sugar and salt.
- Using large metal skewers, thread the chicken, alternating with bell pepper and red onion slices.
- Grill the skewers for 10 or so minutes, turning every 2 minutes, until chicken is cooked through.
- Place all ingredients in the base of a blender, and blend for a minute, or until smooth.
