Thai Curry Sweet Potato Lentil Soup


An easy, healthy Thai Curry Sweet Potato Lentil Soup. Lentils, sweet potatoes and coconut milk give this Thai curry soup the creamiest texture! All made in one pot and so easy to prep.



It’s Sunday.  Yaaaay, week-end!  I mean it!  I worked a 5 day week for the first time in a year {since returning from my maternity leave}…longest week everrr!

Very refreshing to be back amongst the adults in the land of normal people, but very difficult not to start every sentence with “You won’t believe what Kai did!”, followed by showing off 18,000 photos on my phone.

Or check my phone for an update from our daycare.  Ummm….so my first week back may have been a little unfocussed.

Productive or not, I made it through the week, thanks in part to this delicious and healthy Thai curry sweet potato lentil soup, which I enjoyed for lunch several days in a row!

I am loving the soup these days.

Truth be told I eat soup all through the summer as well, I just didn’t post any on my blog.  But fall is here, the leaves are turning, and people want soup, and apparently Slow Cooker Tuscan Chicken Stew.  {I still never have a clue as to which recipes are going to take off, and was totally surprised about this one!}

So today I have some of my favorite ingredients combined all in one glorious soup: sweet potatoes.  Lentils.  Thai ingredients: red curry paste, fish sauce, lime juice, coconut milk.  Together, they make something pretty wonderful!

I couldn’t get over how creamy this sweet potato lentil soup ended up!  The sweet potato and lentils give it some body, and the coconut milk enhances the creaminess even more.

Thai food is a mix of contrasting flavors, and I absolutely loved all of the flavors here: sweet, savory, spicy, and a bit sour {from the lime juice}.  All together= a wonderful, flavor-packed soup that ended up distinctly Thai, yet somehow different than any Thai food I’ve ever eaten {I think it was the sweet potatoes & lentils}.

This is the type of soup that gets better with time.  I had it for lunch four days in a row {!}, and I swear each day it tasted better and better.

Best served with a chunk of bread or soup crackers.

Thai Curry Sweet Potato Lentil Soup

This comforting soup is also so good for you! Packed with sweet potatoes, lentils and carrots, spiced with curry paste, fish sauce and lime juice, and finished off with creamy coconut milk, this soup comes together quickly!

Serves: 4-6
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, sliced
  • 1 tbsp ginger, peeled & diced into small pieces
  • 1 tbsp Thai red curry paste (My favorite curry paste)
  • 1 medium sweet potato {500g}, peeled and diced into ½ inch cubes
  • 2 medium carrots, peeled and diced
  • 3 cups stock {veggie or chicken}
  • ¾ cup dried red lentils
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
After simmering:
  1. Heat olive oil in a large saucepan over medium heat.
  2. Add the onion and cook, stirring occasionally, until translucent and cooked through. Add the garlic and ginger, and cook for a minute.
  3. Add the curry paste and cook until onions/garlic/ginger are coated and you can smell the curry paste, 30 seconds-1minute.
  4. Add the sweet potato, carrots, stock, lentils, fish sauce and lime juice. Cover, bring to a boil, reduce heat, and simmer for 20 minutes, until lentils and sweet potato are cooked through.
  5. Using an immersion blender, puree the soup until smooth and creamy. Stir in the coconut milk. Add salt and additional lime juice and fish sauce to taste.
