What Kind of Garlic Should I Use?
You can roast any kind of garlic that you can get your hands on at your local grocery store - which in most cases will be some vaiety of softneck garlic. Softneck garlic is more tolerant to heat and stores well, whereas hardneck garlic is less heat tolerant, but typically has more intense flavors than softneck. (1) Garlic varieties that have more naturally occurring sugar may be superior for roasting such as "chesnok" garrlic. (2)
Note - you can roast as many heads of garlic as will fit in your air fryer!

Step by step directions
Slice
Cut the top ¼ inch off of a head of garlic.
Wrap
Wrap- Wrap the garlic in foil, but leave the top open.

Drizzle
Drizzle olive oil over the tops of garlic; roughly ½ tablespoon per head should suffice. Wrap the garlic up tightly in the foil.
Cook
Pre-heat air fryer to 190°C/375°F. Place foil-wrapped heads of garlic into the basket. Cook for 15-25 minutes.
Important note - cook time varies with the size of heads of garlic; we recommend you start checking at 15 minutes to avoid overcooking
Check
Depending on the model of your air fryer and the size of your heads of garlic, cook time will vary. Start checking close to 20 minutes by gently prying open the foil. Garlic is ready when tops are golden brown.
Store
Cool garlic for 20 minutes, then squeeze it to pop cloves out into a jar or storage container. Use in hummus, soup, mashed potatoes, or spread on toast.

Unlike raw garlic, roasted garlic must be stored in the fridge. You can either leave it wrapped in the foil used for roasting, or pop out the cloves and store in a jar with a glug of olive oil. Store in the fridge for up to 2 weeks.
It's important to cover your garlic while roasting so the cloves don't dry out, so if you're looking for a zero-waste garlic roasting method, you could try putting in a baking dish and covering with a reusable silicone lid, or using extra olive oil to ensure that it does not dry out.
Roasted garlic may also be frozen. To freeze, press the roasted garlic into ice cube trays and freeze until solid. Transfer to a silicone bag or meal prep container and freeze for up to 3 months.
We recommend a good quality extra virgin olive oil. Avocado oil is another good bet!
