Balsamic roasted brussels sprouts are made with just 5 simple ingredients and cook up in under 30 minutes. They are crispy and caramelized on the outside, and tender on the inside! Vegetarian, gluten-free, and low carb.
Balsamic roasted brussels sprouts are one of our favorite ways to cook brussels sprouts, but these seriously amazing brussels sprouts with bacon and this apple fennel brussels sprouts slaw are also delicious!
Brussels sprouts can be a highly controversial ingredient. We all probably have memories of bland, soggy, boiled sprouts...which is the worst possible way to cook them! But, when prepared properly they are so delicious - in fact these are so tasty, I'll bet they dissapear quickly (and your kiddos may even enjoy)!
These balsamic roasted brussels sprouts are crispy, carmalized and so delicious. The balsamic vinegar balances out the sharp taste of the brussels sprouts, and roasting them transforms their flavor from bitter to sweet. Perfect for a holiday feast, a weeknight dinner, or even as part of your meal prep!
Reasons you'll love This Recipe
- the balsamic vinegar balances out the bitterness of the brussels sprouts, and roasting them brings out their sweet flavor
- they are crispy and caramelized, but tender and juicy on the inside
- they require just 5 ingredients and cook up in under 30 minutes

Ingredient Notes
- Brussels sprouts - you can use fresh or frozen brussels sprouts for this recipe
- Parmesan cheese - use fresh grated parmesan cheese for the best flavor!
- Balsamic vinegar - if possible, opt for a good quality balsamic vinegar as well. The poor quality balsamic vinegars are watery and thin in texture and in flavor. Here's a great article on picking a good quality balsamic vinegar!
Step By step directions
Prepare
Heat oven to 450ยฐF. Wash brussels sprouts (I like to soak them in cold water for 5 minutes). Prepare brussels sprouts: trim off stem, then slice in half.
Combine
Toss the brussels sprouts in olive oil and balsamic vinegar, then arrange on a large sheet pan. Season generously with salt and pepper.

Roast
Roast for 25 minutes at 450ยบF or until the brussels sprouts are browned and cooked through, flipping once halfway through.
Tip - A hot oven helps to get those crispy, flaky peels, and helps caramelization happen on the surface of the brussels sprouts. A lot of roasted brussels sprouts recipes call for roasting at 425ยฐF, but we're going even higher (450ยฐF) to make them extra crispy!
Serve
Sprinkle with parmesan cheese if desired. Enjoy!
FAQ
Yes. Do not thaw, simply toss in the oil and vinegar, and roast until they are cooked to your liking- they will not get crispy, but using the convection setting of your oven can help wick extra moisture from the tray.
You definitely could! Add a drizzle of maple syrup or honey for some sweetness without any refined sugar.

Have you tried these in the air fryer? I am wondering how the temperature and time would change?
These look great! I love brussel sprouts and am always looking for new way to cook.
Denise says
Hi Brenda! I have not tried these in the air fryer. I would probably go for 390ยฐF/200ยฐC and try 5 minutes? I'm seriously guessing...it could be 10 or even 15 min. Let me know how they turn out for you!
