 6 ingredients, 20 minutes, and no oven is required for these simple and delicious no-bake peanut butter cereal bars!

If my one year old could choose one thing that he could eat for every meal for the rest of his life, I’m certain he would answer ‘peanut butter toast’.

If he could talk, that is.

Mr. Picky has rejected all things green, all things meat, pasta, and the large proportion of fruit, vegetables, grains, etc we have offered him.  But he would never, ever say no to peanut butter.  At least it has protein.  Sigh.

Unfortunately for Kai, these bars were not meant for him.  These were for mommy!

They are loaded with crunchy peanut butter, corn syrup, brown sugar, and crunchy Rice Krispies and Corn Flakes.  Crunch crunch crunch.  Not so good for my 6-toothed lil’ man.

Maybe a peanut butter addiction is a genetic trait…because I am equally guilty of craving all things PB.  And for some tragic reason, the last PB recipe I posted was waaaaay back in May.

So PB recipes…today, and hopefully next week!  Much to Ben’s dismay {he has a blind hatred towards any sort of peanut butter-dirtied dish}.

These peanut butter cereal bars are so ridiculously awesome because they are so ridiculously easy.

All you need to do is melt together the peanut butter, corn syrup and brown sugar, stir in the cereal, then press firmly into a greased pan.  Kind of like Rice Krispie treats, minus the marshmallows and with peanut butter.  And topped with chocolate, can’t possibly forget that all-important step!!

Because peanut butter is PEANUT BUTTER!!!! when chocolate is also in the game.

I have not mastered the whole melting-chocolate-in-the-microwave-thing.  I usually end up with a bowl full of  seized chocolate, and a seriously flared temper.

So instead I use a double boiler, which works quickly and produces silky smooth chocolate for spreading over these bars.  Spread gently if you top with chocolate before the bars have completely set.

No-Bake Peanut Butter Cereal Bars

These deliciously crunchy peanut butter and chocolate bars come together in a matter of minutes, with no oven required!

Ingredients
Bars
  • 1 cup peanut butter (I used crunchy, creamy should work but do not use natural)
  • ½ cup brown sugar (dark or light)
  • ½ cup light colored corn syrup
  • 1½ cups Rice Krispies
  • 1½ cups Corn Flakes
Chocolate Topping
  • 1 cup chocolate chips
Instructions
Bars
  1. Line a 9x9 inch pan with foil and spray with oil to coat.
  2. In a large pot, heat peanut butter, brown sugar and corn syrup over medium heat, stirring frequently until mixture is completely combined and slightly melted.
  3. Stir in the cereal until completely coated with peanut butter mixture.
  4. Press firmly into the prepared pan.
Chocolate Topping
  1. Melt chocolate in a double boiler (or microwave if you can manage it), until completely smooth.
  2. Spread evenly over the peanut butter crunch bars, being extremely gentle if bars are still slightly warm.
