Flavor #1- BLT
BLT will forever hold a soft spot in my heart. We are recreating them in open-faced sandwich form today!
- 2 slices bacon (cooked)
- 1 roma tomato (sliced)
- ½ cup iceberg lettuce (chopped)
- 1 tablespoon mayonnaise
- Multigrain Ryvita crispbread
Storage info- assemble bento boxes no more than 48 hours before consuming for best tomato flavor (you can cut the tomato fresh and add each day for the absolute best freshness)
Flavor #2- Marinated Tomato + Cottage Cheese
This is an easy take on a caprese salad. Mild cottage cheese is paired with sweet tomatoes and tangy balsamic reduction. Easy and so delicious!
- ½ cup marinated cherry tomatoes (recipe on card below)
- ½ cup cottage cheese
- ½ tablespoon balsamic reduction
- basil leaves (optional)
- Pumpkin Seed & Oat Ryvita crispbread
Storage info- marinated tomatoes are good for up to 24 hours, but the rest of the ingredients can be portioned out up to 4 days ahead.
Flavor #3- Wasabi Tuna Salad
We are channeling the flavors of a spicy tuna roll with this recipe.
- ½ cup wasabi tuna salad (recipe on card below)
- ¼ cup pea shoots or sprouts
- 1 tablespoon sliced red onion
- sesame seeds to sprinkle over (optional)
- Sesame Ryvita crispbread
Storage info- this bento box can be assembled 3 days ahead and stored in the fridge.
Flavor #4- Pickled Radish and Hard Boiled Egg
This recipe is inspired by Scandanavian Smørrebrød, which is an open-faced Danish sandwich. Often it includes pickled ingredients and eggs, as this flavor includes!
- 1 hard boiled egg, sliced
- ¼ batch pickled radish (recipe in the card below)
- 1 tablespoon thinly sliced red onion
- 1 tablespoon cream cheese
- pea shoots or sprouts
- fresh dill (optional)
- Red Quinoa & Sesame Ryvita crispbreads
Storage- this recipe can be made up to 4 days ahead of time and stored in the fridge.
Tips for the best bento lunch
- keep ingredients separate using multi-compartment bento lunch box containers, silicone muffin liners, or condiment containers (see my shop for the ones I use)
- herbs will only keep fresh if you serve them the day you pack- this would work great for someone working from home
- you can try wrapping fresh herbs in a damp paper towel to transport to work
- you will need a knife to spread condiments out and may want a spoon or fork to place other ingredients on your open-faced sandwich
- check the storage info for each recipe as some keep for longer than others

Ingredients
BLT Bento (serves 1)
- 2 slices bacon (cooked)
- 1 roma tomato (sliced)
- ½ cup iceberg lettuce (chopped)
- 1 tablespoon mayonnaise
- 1 package Multigran Ryvita Crispbread
Marinated Cherry Tomatoes (makes 2 servings)
- 1 cup cherry tomatoes
- 2 cloves garlic (minced)
- 2 tablespoons balsamic vinegar
- 2 tablespoons red onion
- salt + pepper
Marinated Tomatoes Box (serves 1)
- ½ cup marinated cherry tomatoes (recipe above)
- ½ cup cottage cheese (extra liquid drained)
- ½ tablespoon balsamic reduction
- basil leaves (optional)
- 1 package Pumpkin Seed & Oat Ryvita Crispbread
Wasabi Tuna Salad (serves 2)
- 1 can tuna (drained; 170 g; 5 oz)
- 2 tablespoons mayonnaise
- ½ teaspoon wasabi paste
- salt & pepper
Wasabi Tuna Box (serves 1)
- ½ cup wasabi tuna (recipe above)
- ¼ cup pea shoots (or sprouts)
- 1 tablespoon red onion (sliced)
- sesame seeds (optional)
- 1 package Sesame Ryvita Crispbread
Pickled Radish (serves 4)
- 6 radishes (thinly sliced)
- 4 tablespoons apple cider vinegar
- salt & pepper
Pickled Radish and Hard Boiled Egg Box (serves 1)
- 1 egg (hard boiled)
- 1 tablespoon pickled radish (recipe above)
- 1 tablespoon red onion (thinly sliced)
- 1 tablespoon cream cheese
- ¼ cup pea shoots (or sprouts)
- fresh dill (optional)
- 1 package Red Quinoa & Sesame Ryvita Crispbreads
Instructions
BLT Bento Lunch Box
- Combine all ingredients in a multi-compartment lunch box.
- Store in the fridge for up to 48 hours, or slice tomatoes fresh each day (the rest of the components could keep for up to 4 days).
Marinated Tomatoes Bento Lunch Box
- Stir together the marinated tomatoes ingredients, then portion out with remaining ingredients into a multi-compartment lunch box.
- Store in the fridge for up to 24 hours. Marinated tomatoes are good for up to 24 hours, but the rest of the ingredients can be portioned out up to 4 days ahead.
Wasabi Tuna Bento Lunch Box
- Stir together the Wasabi Tuna Salad ingredients, then portion out with the rest of the ingredients in a multi-compartment lunch box.
- Store in the fridge for up to 3 days.
Pickled Radish and Hard Boiled Egg Bento Lunch Box
- First, prepare the pickled radish: combine radish, apple cider vinegar, salt and pepper in a jar or bowl. Microwave for 1 minute, stir, then return to the microwave for 1 more minute.
- Allow pickled onions to cool, then portion out with the rest of the ingredients in a multi-compartment lunch box.
- Store in the fridge for up to 4 days.
