- 1 roma tomato (sliced)
- ½ cup iceberg lettuce (chopped)

- 1 cup cherry tomatoes

Store in the fridge for up to 24 hours. Marinated tomatoes are good for up to 24 hours, but the rest of the ingredients can be portioned out up to 4 days ahead.

Pickled Radish and Hard Boiled Egg Bento Lunch Box
First, prepare the pickled radish: combine radish, apple cider vinegar, salt and pepper in a jar or bowl. Microwave for 1 minute, stir, then return to the microwave for 1 more minute.
