It’s really starting to feel like summer out there!  The garden is semi-planted, the BBQ has been on non-stop, LOTS of ice cream has been consumed.  The flip flops have been flip flopping, the sprinklers have been sprinkling, the cold beers have been kh-chh’ed (that was the sound of a beer bottle opening, FYI).

And for some reason, summer makes me kind of lazy…you know?  That house cleaning?  It can wait….the laundry?  It can wait, too.  I have more important things to think about.  Like lounging on my deck.  With one eye semi-open and on Kai.  Because that kid is SO much trouble, so lounging is never all that restful in reality.

Well, product of that laid-back easy summer attitude I’ve had lately is this super easy and delicious chili-lime sweet potato and chicken skillet…so easy, super tasty, and only one pan to wash up.  Woo hoo!

I guess you could say that I’m on a bit of a one-pot/one-pan bender lately.

It all started with this round-up of 19 Healthy One Pot Dinners.  I had so much fun looking at all of the creative and delicious ways that dinner can be cooked in one pot or pan, and have been inspired ever since!

I wanted to break away from the pasta for this one, and cook up something with vibrant Mexican flavors….and voila!

This is one seriously protein-rich dinner…between the black beans and the chicken breast, there is no way you’re going to be hungry after this!

The sweet potato and chicken skillet recipe is also packed with fresh veggies: sweet potato, bell peppers, and red onion…feel free to substitute whatever you have on hand…this is an easy ‘clean out the fridge’ kind of meal.  I’ll bet zucchini and corn would also be tasty in here!

Everything is cooked up in some chicken stock and seasoned with chili powder, cumin, and lime zest.  Both Ben and I just couldn’t get enough of these flavors, and the left-overs made for a great lunch the next day!

So…if you are anything like me, and tend to get a little bit ‘lazy’ when it comes to cooking (and especially when it comes to washing dishes) in the summer, this is the dish for you!  Easy prep, easy cooking, and only one pan to wash up.  So you can get back to lounging on the deck…or whatever your favorite summer activity happens to be 😉

A simple, easy and healthy dinner that cooks up all in one pan! Sweet potatoes, chicken, black beans and bell peppers are flavored with chili-powder and lime.

Serves: 4-6
Ingredients
  • 2 large chicken breasts, cut into 1-inch cubes
  • olive oil (2 or so tablespoons)
  • salt and pepper
  • 1 large sweet potato, cut into 1-cm (1/2 inch) cubes (approx 4 cups)
  • 2 bell peppers, cut into small pieces
  • ½ red onion, cut into small pieces
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • ¼ teaspoon salt
  • 1 cup chicken stock
  • 1 tablespoon lime zest
  • 1 can black beans, drained (540mL/18 oz)
  • cilantro leaves (garnish)
  • lime wedges/wheels (garnish)
  • greek yogurt (to serve)
Instructions
  1. In a large skillet or pan, heat 1 tablespoon of olive oil over medium heat. Add the chicken, and brown (approximately 6 minutes). Don't worry about cooking it right through.
  2. Remove the chicken from the pan and place on a plate.
  3. Add another tablespoon of olive oil to the pan. Add the sweet potato, and cook for 10-12 minutes, until browned. I found it browned better when I didn't stir it too frequently, only every 2-3 minutes.
  4. Add the bell peppers, red onion, chili powder, cumin, salt and chicken stock. Return the chicken to the pan. Stir so that everything is well combined.
  5. Cover and cook for another 10 or so minutes, stirring once or twice. Chicken and sweet potato should be cooked through.
  6. Add the black beans and lime zest, and cook until heated through.
  7. Taste for salt, and add more if needed.
  8. Serve immediately with lime wedges and a dollop of Greek yogurt.
