Only 15 minutes effort for perfect soft and chewy almond butter granola bars topped with dark chocolate and a sprinkling of sea salt!

Between being a mom, doing my PhD, and running a food blog, there doesn’t seem to be much unoccupied space in my brain.

Which means that some useless information has finally escaped.  I used to be right up on my celebrity gossip…I could tell you who was dating  who and who was wearing who (whom?).  I had the hardest time memorizing things for midterms in my undergrad, yet I could tell you the name of the rehab centre which Lindsay Lohan was currently residing.  It drove me crazy that I could remember such useless details and not the important ones!

These days, though, I can’t identify half of the ‘celebrities’ on magazine covers let alone tell you who they are dating or wearing.  And then today, I read somewhere that Cameron Diaz and Benji Madden got married and I was so confused…they’re a couple?!  I didn’t know they were even dating, and given that they are such an ‘odd couple’, my former self would have loved this type of gossip!

Then I realized that they actually got married a month and a half ago.  And I was secretly happy to have had no prior knowledge of this totally useless information.

Less celebrity gossip in my brain means more room to come up with fun recipes!  And I have had plans to make these almond butter granola bars for awhile.

After getting all inspired by 29 Healthy Work Lunch Ideas, I decided that it was time to get granola-ing.

This is my attempt at healthy…yes, that granola bar above that is dripping in chocolate…

What can I say?  I always gravitate towards the chocolate-dipped granola bars 😀

So yes, there is chocolate.  Dark chocolate.  Antioxidant-rich chocolate.  See?  Healthy.

In addition to the chocolate, there are some other {slightly more legit} healthy ingredients: almond butter, oatmeal, honey, coconut oil, coconut flakes, and Rice Krispies.  Um, yes…Rice Krispies in there with all those wholesome ingredients.  Trust me on this one: snap, crackle, pop!

These ingredients come together to have the perfect blend of textures…soft, chewy and slightly crispy.

Best of all: 15 minutes of effort.  Whip up these almond butter granola bars, let the cool in the fridge, cut them up, then drizzle with the chocolate.  I drizzled the chocolate because they were slightly too soft for dipping, and I couldn’t get the chocolate to cut properly without crackling when I poured the chocolate over the bars and let them set.

And repeat after me: I will not leave out the sea salt.

Ingredients
Almond Butter Granola Bars
  • 1 cup sweetened flaked coconut
  • 1 cup rice krispies
  • 1 cup quick oats
  • ½ cup sliced almonds
  • ½ cup almond butter
  • ½ cup honey
  • ¼ cup brown sugar
  • 3 tbsp coconut oil
Chocolate
Instructions
  1. Prepare a 9x9 inch pan by lining with parchment paper or aluminum foil. Set aside.
  2. In a large bowl, mix together coconut, Rice Krispies, oats and sliced almonds. Set aside.
  3. In a medium pot, combine the almond butter, honey, brown sugar and coconut oil. Heat over medium-low heat, stirring frequently, until everything is completely combined, and smooth.
  4. Pour wet ingredients over dry, and stir until completely combined.
  5. Press firmly into the prepared pan with a spatula. Refrigerate for at least 1 hour before cutting into bars.
Chocolate
  1. In a double boiler, heat the chocolate and coconut oil, stirring until completely combined and smooth.
  2. Using a spoon, drizzle the chocolate over the bars (over wax paper or parchment).
  3. Sprinkle with salt.
Notes
Bars are best stored in the refrigerator. They will keep for up to 7 days in a sealed container.
