On Tuesday I promised you a salad, and here you go!

Normally I would save a salad for a Monday/Tuesday sort of post, however due to life, you’re getting a Friday salad!  A Friday salad has to be pretty darn special, because let’s face it: Friday is an indulgent dessert kind of day.  This salad has to be really special…dazzling, sparkly life of the party kind of special.

Guess what?  This Gouda and hazelnut spinach pear salad is the life of the party!

This spinach pear salad is completely inspired by Geraldine at Green Valley Kitchen’s Apple Gouda and Walnut Salad.  I had completely forgotten about my old friend Mr. Gouda and how amazing he tastes with fruit!

So I threw out my Asian pear spinach salad plans {perhaps to resurface someday}, and made this salad instead.  Best decision ever!

I think this spinach pear salad is going down in the books as my favorite salad.  Ever.  Hands down, end of story.

It is packed with all sorts of subtle flavor: pears, pomegranates and Gouda, plus the lightly sweet and tangy dressing.  None of the flavors are overpowering, and they work together just perfectly!

I also love all the contrasting textures: soft pear, creamy Gouda, crunchy hazelnuts and velvetty spinach.  Yum, yum and yum!

I have eaten this spinach pear salad for two dinners {added some grilled chicken and fresh bread}, and three lunches this week!  I am completely and utterly smitten.  It is true love!

Definitely a Friday salad.  But really just an any day, any time salad 🙂

A delicious spinach salad that combines pear, Gouda, toasted hazelnuts and pomegranate seeds, tossed in a tangy vinaigrette
Recipe type: salad
Serves: 4-6
  • 2 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 2 tsp maple syrup
  • ½ tsp dijon
  • salt & pepper to taste
  • 1 5 oz {140g} bag of baby spinach
  • 1 pear, cubed
  • ¼ cup pomegranate seeds
  • ⅓ cup toasted hazelnuts, coarsely chopped
  • ½ cup Gouda cheese, cubed
  1. Shake together all vinaigrette ingredients.
  2. Combine all salad ingredients and toss in dressing. Serve immediately.
