Tips:
Broccoli + Cheddar: replace the mushrooms, onions & sundried tomatoes with 1.5 cups broccoli florets (SMALL), replace the Swiss cheese with cheddar.
Zucchini + Feta + Dill: replace the mushrooms & sundried tomatoes with 1 cup shredded zucchini (let it dry on a paper towel for 10 min first), and replace ยพ cup of the Swiss cheese with crumbled feta (sprinkle tops with ยผ cup of cheddar/mozza). Replace salt & pepper with 1 teaspoon dried dill.

Hi Denise! These look fantastic. I can't have cheese, so do you know if that can be omitted and/or what I could use to replace it? Just a different ingredient like broccoli? Or is the cheese necessary as a binder? Thank you!

Hi Lindsay! I haven't tried the recipe without cheese, but it should be fine without. You may end up with a few less muffins, and you may need to add additional seasoning. I hope you like them!

The mushrooms look sautรฉed, but I don't see it mentioned. Do you just throw them in uncooked? I can't wait to try this. Seems like a spinach or broccoli variety would be good too! Keep the "grab and go" recipes coming!

Hi Sandi! The mushrooms go into the muffins raw and cook through as they bake! And actually you can do the same with broccoli, I subbed the tomatoes and mushrooms for 1 1/2 cups of broccoli, but make sure to cut it quite small so that it cooks through. I hope you like them!
