These chipotle grilled shrimp skewers are another family favorite. They are a little bit sweet, a little bit savory, and have the best smoky flavor thanks to the grill.

Ingredients you'll need
- Shrimp- look for jumbo shrimp. I've left the tails on for the grilled shrimp skewers photos but to make them easier to eat, you'll want to remove the tail and shells
- Olive oil- or your favorite neutral oil for the grill; avocado oil is another great choice as it has a high smoke point
- Lime juice- fresh is best for this recipe!
- Chipotle pepper- this comes in a can and can usually be found with the Mexican food aisle. Chop finely and wash your hands well after handling. Leftover chipotle pepper and adobo can be frozen and used in another recipe
- Maple syrup- is used as a glaze while the shrimp grills. Maple syrup adds a sweetness that balances the smoky chipotle and sourness from the lime. You may swap for honey

Recipe tips
Soak wooden skewers
Before prepping your grilled shrimp skewers, you'll want to soak wooden skewers. This helps prevent them from burning and breaking. Place in a large bowl or baking dish filled with cool water for at least 30 minutes.
Quick marinade only
Unlike chicken, pork, or beef, shrimp can only handle a very short marinating time. For this recipe, we are marinating while the grill heats (10-15 minutes). You can marinate up to 30 minutes, but want to avoid longer than that as the acid from the lime juice can start to break down proteins in the shrimp, giving it a mealy texture.
Glaze it
You'll want a long-handled silicone brush to glaze the shrimp with the maple syrup while it grills. The glaze helps the outside of the shrimp caramelize and brown, while also giving it a deliciously sweet flavor.
Storage + Meal prep tips
Grilled shrimp skewers can be safely stored in the fridge for up to 4 days after cooking, however, I personally enjoy the flavor most within the first two days. If you plan to store leftovers, make sure you refrigerate shrimp within 2 hours of cooking.
- fridge- store in an air tight container in the fridge for up to 4 days (for best flavor, eat within 48 hours)
- reheat- on the grill or in a frying pan over medium heat for 2-3 minutes or until steaming hot
- do not reheat more than once
Marinade may be mixed together up to 4 days ahead, but remember the shrimp should only be marinated for a maximum of 30 minutes.

Chipotle Grilled Shrimp Skewers with Maple Glaze
Ingredients
- 1 lb shrimp thawed, deveined and peeled
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 chipotle pepper finely chopped
- ½ cup maple syrup
Instructions
- In a medium-sized bowl, stir together the olive oil, lime juice and chipotle pepper. Stir in the shrimp to coat.
- Allow the shrimp to marinate while you heat your barbecue to medium-high (15 or so minutes; see note 1).
- Skewer the shrimp (4-5 per skewer, don't overcrowd!).
- Grill 2-3 minutes per side, brushing thoroughly with the maple syrup.
