Spinach & Artichoke Whipped Feta Dip

Feta is whipped to creamy perfection with spinach, artichokes, and a hint of lemon zest!  Perfect as a dip or on sandwiches.

Look!  I made you a dip, and it isn’t hummus!  Shocking, isn’t it?

I have four different variations of hummus on this site, and I thought maybe it was time to branch out.

This time, I actually didn’t have dip in mind…I just wanted something spinach and artichoke.  I tried making one-pot pasta with it, but it was way too rich.  I considered making a grilled cheese sandwich with it, but Google told me it had been done many other times.

Finally, I considered whipped feta…but as a dip.  With spinach and artichokes.  And it turned out perfectly the very first time I made it!  Third time’s a charm!

Spinach & Artichoke Whipped Feta DipI was really lucky that this recipe worked out, because I had more than a few duds last week-end, and I was a little worried that I would have nothing to share with you this week.  Whipped feta to the rescue!

I mean…whipped feta.  It was always going to be yummy, right?

This feta is whipped into a frenzy with some ricotta cheese, spinach, artichokes, garlic, and a touch of lemon zest.  Whipped feta on its own can tend to be verrrry strong, perfect on a Greek Turkey Burger, but a little overpowering for a dip.  Luckily the spinach and artichokes dilute out the feta flavors a bit so that this dip has the perfect amount of feta-ness.

This whipped feta would be great on a sandwich, too!

And guess what?  I gave Kai a slice of naan bread slathered with this whipped feta (as a treat), and he actually ate it!  It officially has the Kai seal of approval, which is a verrrry rare thing!

Ingredients
  • 6 oz feta cheese
  • ¼ cup ricotta cheese
  • 1 clove garlic
  • 10 oz package frozen spinach, thawed, and liquids squeezed out
  • 1½ cups artichoke hearts (I used a 400mL/ 13.5 oz can), drained
  • 1 teaspoon lemon zest
Instructions
  1. In a 7-cup food processor fitted with a steel blade, combine the feta and ricotta cheeses.
  2. Blend for 30 seconds, scrape down sides of processor with a spatula, and repeat.
  3. Add all remaining ingredients to the food processor, and blend until smooth.
  4. Serve with pita bread, naan bread, on a sandwich or a burger.
