This creamy carrot raisin salad recipe is a quick and refreshing idea for picnics, potlucks, BBQs, and tailgates!

The classic carrot raisin salad has stood the test of time; it's simple, nostalgic, bursting with flavor, and even made it onto Chick-Fil-A's menu! This version boosts the protein with wholesome Greek yogurt and is naturally sweetened with honey and pineapple for a nutritious make-ahead side dish. It's crunchy, crowd-pleasing, and versatile... The ideal recipe! You only need a few minutes for the perfect dish to pair with sandwiches, chicken, pulled pork, fish, and so much more.

  • Carrots: These should be washed, peeled, and shredded.

  • Plain Greek Yogurt and Honey: This creamy, sweet dressing coats every bite to keep the salad refreshing and delicious!

How to make Carrot Raisin Salad

  1. Mix your Greek yogurt and honey to create a creamy dressing.
  2. Stir in the shredded carrots, drained and crushed pineapples, and raisins.
  3. Taste, then add more honey and/or pineapple to your taste preferences.
  4. Store in an airtight container in the refrigerator and enjoy within 4-5 days.

This carrot raisin salad is creamy, refreshing, and ready in minutes. It's the perfect make ahead side dish for potlucks, picnics, and light lunches!

Ingredients

  • ¼ cup plain Greek yogurt
  • 1 tablespoon honey
  • 1 cups shredded carrots
  • ⅓ cup crushed pineapple drained
  • ½ cup raisins

Instructions 

  • In a large bowl combine the greek yogurt and honey.
  • Fold in the shredded carrots, drained crushed pineapple and raisins.
  • Add additional honey and pineapple to taste.
