  • Mayonnaise: I used regular, full-fat mayonnaise, but you can use any kind you prefer.
  • Celery, Red Onion, and Dill Pickles: These provide great flavor and the perfect crunch! Finely chop these so you get a good dose in every bite.
  • Fresh Dill, Salt, Pepper, and Pickle Juice: These boost the flavor of our other ingredients and can be adjusted to taste.

How to make the best dill pickle chicken salad

This recipe is so simple! Mix together all of your ingredients in a large bowl, carefully ensuring each piece of chicken and veggie is coated in the mayonnaise and seasoning. Taste it, then add additional salt, pepper, dill, or pickle juice as desired.

Store in the refrigerator in an airtight container for up to 3-5 days.

This dill pickle chicken salad is creamy, crunchy, and bursting with flavor! This easy low-carb, high-protein recipe is perfect for meal prep.

Ingredients

  • 3 cups cooked chicken cut into small pieces.
  • ½ cup mayonnaise
  • ½ cup finely chopped celery
  • ¼ cup red onion finely chopped
  • ½ cup finely chopped dill pickles
  • 1 teaspoon finely minced fresh dill
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 + teaspoons pickle juice

Instructions 

  • In a large bowl combine the cooked chicken, mayonnaise, celery, red onion, dill pickle, fresh dill, salt, pepper and pickle juice.
  • Stir to combine.
  • Add additional salt, pepper, fresh dill or pickle juice as desired.
  • Store in the fridge in an airtight container.
