Kale Pesto with Sunflower Seeds and Pepitas

I am writing from the depths of a turkey coma.  We had our {Canadian} Thanksgiving this past week-end!  There was turkey.  Sausage, cranberry and cornbread stuffing.  More turkey.  Raspberry Balsamic Cranberry Sauce.

And yes…three days later, a batch of turkey chili and some turkey tacos later and we are still.  eating.  turkey.

I needed a little turkey break…so we had this Kale Pesto with Sunflower Seeds and Pepitas on some pasta salad, to give ourselves a healthy turkey alternative.

For whatever reason, I always think of kale as a wintery ingredient…even though it is one of the few things I can actually grow in my garden!

When fall kicks in, the kale salads get-a-going.  And that’s normally where it ends.

I thought this kale pesto would be a good way to kick us out of our kale rut.

It is an ever-so-slightly mellower pesto than you may be used to.  The kale brings a mild sweetness, the pepitas and sunflower seeds bring a nuttiness and slight crunch.  The kale pesto is rounded out with Parmesan, garlic and lemon juice…aka: the usual pesto suspects.

The texture here is pure pesto…creamy and delicious!  It is impossible to believe there is an entire bunch of kale in there.  So much healthy goodness, but it doesn’t taste ‘healthy’ at all!

We enjoyed our kale pesto as a dressing for a pasta salad, and as a tomato sauce substitute on our pizza…but the possibilities certainly don’t stop there.

Hmmm.  I wonder how it would taste on turkey leftovers.  I guess that will be the next turkey dish, some sort of turkey/veggie/pasta toss.  And hopefully we will finally see the bottom of our turkey tupperware!

Kale Pesto with Sunflower Seeds and Pepitas

This pesto is packed with nutritious kale and toasted pepitas and sunflower seeds. A fun pesto remix!
Serves: 6-8
  • One bunch of kale, stems removed and rinsed {roughly 200g}
  • ¼ cup pepitas
  • ¼ cup sunflower seeds
  • ½ cup Parmesan cheese
  • 1 garlic clove
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • ¼- 1/2 tsp salt {to taste}
  1. Bring a large pot of water to a boil. Add the kale, and simmer for one minute. Drain kale and run under cold water until cool. Leave in colander to drain while preparing other ingredients.
  2. Heat pepitas and sunflower seeds in a small pan over medium heat. Cook, stirring frequently until seeds are lightly browned and toasted.
  3. Combine all ingredients in a food processor and blend. You will need to scrape the sides several times and continue blending.
