These strawberry balsamic bites contain fresh strawberries servedย with basil, crumbled feta and a balsamic reduction in crispy wonton cups. This lighter party appetizer comes together in under 30 minutes and can be made ahead of time!
Is it starting to feel like spring in your neck of the woods? It has been unseasonably warm here lately!
And for some reason my brain is forgetting that it's still February, and has already fast-forwarded to spring...sunshine, flowers, and fresh strawberries!
Well, come to think of it, I have seen some beautiful (and affordable) strawberries at the grocery store this week (thank-you, Florida!), and that is probably where this recipe gets its inspiration.
And strawberries couldn't be more perfect for a baby shower!
You read that right: we are having a baby shower! One belated, two right on time ๐

Today, I've partnered with some of my best blogging buddies to throw a virtual baby shower for three of our girls: Natalie from Tastes Lovely, whose adorable little man made an unexpectedly early entry into the world back in November, Izzy from She Likes Food, who is expecting a little boy, and Jess from Flying on Jess Fuel who is expecting a little girl!
I am so excited for all three of these ladies, because babies are just the best! Having a baby is one of those amazing life-changing experiences, and I know these ladies are all going to be great moms (Natalie: you're already there ๐ ).
So in honor of Natalie, Izzy and Jess, I made these little Balsamic Strawberry Wonton Bites. In terms of shower food, it is nice and light, and SUPER easy! Not to mention: you can make them ahead of time, transport them to wherever you are headed, and assemble them on site.
If you follow me on snapchat (you can add me: sweetpeasaffron), then you may have seen me testing these guys. I wanted to make sure that these were bite-sized, so I used mini-muffin trays instead of regular muffin trays. Butย usingย a wholeย wonton wrapper gave me a crunchy, dry appetizer, with not enough strawberry flavor.
So for round two, I trimmed the wontons so that they *just* fit into my mini muffin pans. I liked this version much better.
I LOVE the flavors you get in these strawberry balsamic bites: sweet strawberries, salty feta and tart balsamic vinegar. The basil brings this cool freshness to everything. You get a whole lotta flavor in just one bite!
I also love that these strawberry balsamic bites are nice and light. Which means you can eat 10 of them, right? I'm just going to keep telling myself that ๐
Congratulations to Natalie, Izzy and Jess! I'm so happy and so SO excited for you ladies. And now I have baby fever. D'oh.
