Pantry meals have a certain rap for being heavy or filled with processed ingredients, but with a little creativity, they really can be light, fresh and delicious!

Tips for these recipes
- the mashed black beans could be prepared and stored in an air tight container in the fridge for up to 4 days
- pre-shred the cheese or chop the artichokes, roasted red peppers and lettuce up to 4 days ahead
- do not assemble the open faced sandwiches ahead

Recipe 1- hummus
This recipe has a distinctively Mediterranean flavour that tastes so gourmet you'd never guess it was made from pantry staples!
For this recipe you'll need:
- hummus
- roasted red peppers
- artichoke hearts
- feta cheese
Tips
- swap the hummus for cream cheese, tuna salad, or guacamole
- swap the roasted red peppers for sun dried tomatoes (finely chopped)
- feel free to add in prosciutto or deli meat that you may have on hand
Recipe 2- pizza
Perfect for kids, or grown ups who want to satisfy their inner child 😉 Mix it up and add your favorite pizza toppings!
For this recipe you'll need:
- pizza sauce
- cheese
- olives
- pepperoni slices
Tips
- swap the pizza sauce for pesto or barbecue sauce
- swap the olives + pepperoni for your favorite pizza toppings: mushrooms, onion slices, green peppers, pineapple or chicken
- be sure to chop the toppings finely so they can be spread out evenly across the crispbread
- keep a careful eye on them while baking as they can go from perfect to burnt quickly
Recipe 3- black bean tostadas
With a creamy black bean base, think of these as 'tostadas', or open-faced tacos. Get creative with what you have in the fridge or pantry and mix and match to get your perfect tostada.
For this recipe you'll need:
- black beans
- lime juice
- salt, cumin, ground coriander
- sour cream
- lettuce
- tomatoes
- cheese
Tips
- prep the mashed black beans up to 4 days ahead
- swap the black beans for taco meat (here's my favorite taco seasoning)
- swap the sour cream for greek yogurt or guacamole
- swap the lettuce + tomatoes for jarred salsa and other odds and ends in your fridge

5 Minute Pantry Lunches
Ingredients
1. Hummus
- 1 Ryvita crispbread sesame rye pictured
- 2 tablespoons hummus
- 1 tablespoon roasted red pepper chopped
- 1 tablespoon artichoke hearts chopped
- 1 teaspoon feta cheese crumbled
2. Pizza
- 1 Ryvita crispbread sesame rye pictured
- 1 tablespoon pizza sauce
- 2 tablespoons mozzarella shredded
- 4-5 pieces pepperoni
- 4-5 olive slices
- dried basil optional-to sprinkle
3. Black Bean Tostadas
- 19 oz can black beans drained + rinsed
- 1 teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon ground coriander
- 1 lime juiced
- 1 Ryvita crispbread sesame rye pictured
- 2 tablespoons lettuce shredded
- 1 tablespoon tomatoes chopped
- 1 tablespoon mozzarella shredded
- 1 tablespoon sour cream
Instructions
1. Hummus
- Spread hummus onto crispbread. Top with roasted red pepper, artichokes and feta cheese.
2. Pizza
- Heat oven broiler.
- Spread crispbread with pizza sauce, then sprinkle with cheese. Top with pepperoni and olive slices and sprinkle with basil if desired.
- Broil for 2-4 minutes, until cheese is melted.
3. Black Bean Tostadas
- In a large bowl, mash the black beans with a fork until broken and chunky.
- Add the salt, cumin, coriander and lime juice, and mix until completely combined. Taste and adjust seasoning to taste.
- Spread 2 tablespoons of the black bean mixture onto a crispbread. Top with sour cream, lettuce, tomatoes and cheese.
