An easy and healthy popsicle recipe with blueberries, yogurt and mint.
I am such a stereotype...a pregnant lady who is obsessed with ice cream.
It started out somewhat innocently. A fruity popsicle here and there to calm my upset stomach.
Then I graduated to having my very own pint of ice cream in the freezer. No bowl necessary, just grab a spoon. Just doing what I can to cut back on dish washing, you know?
Then I moved on to McFlurries. There is a McDonald's right around the corner. So very dangerous.
Now, I have moved onto the Dairy Queen Blizzards. So many flavors, real ice cream, and they actually get all the little bits and pieces right down to the bottom of the cup.
So you see, I've become a bit of an ice cream connoisseur.
This week, I wanted to try my hand at a healthier option to my Blizzard obsession.
And I happened to have oodles and oodles of blueberries, and a mint supply that is growing slightly out of control.

So this is what I came up with.
I actually tried to make a different batch popsicles a few weeks ago, and it was pretty much a disaster.
Lessons learned from that 'experiment': a) putting nectarines and yogurt in a blender results in something that looks reeeeally gross and b) turns out, you do need to add some sugar. Just a little bit.
Still, even with the sugar, these popsicles are waaaay healthier than a Blizzard. According to my math, these babies have 94 calories each. Not bad at all. Especially compared to a Blizzard. There is no way I'm checking how many calories are in a Blizzard!
But who cares if they're healthy...do they actually taste good?
Yes, they do!
Blueberries and mint go together like two peas in a pod. The yogurt adds some creaminess to the popsicles. Best of all, they are sweet enough to satisfy my sweet cravings.
Guilt free dessert...I love it.

Blueberry-Mint Yogurt Pops
Ingredients
Simple Syrup:
- โ cups water
- โ cups granulated sugar
- โ cups mint leaves loosely packed
Popsicles:
- 3 cups fresh blueberries
- 1 cup plain yogurt
- 5 teaspoons honey
- 4 teaspoons lemon juice
Instructions
- Simple Syrup Combine sugar, water and mint leaves in a small pot. Bring to a boil, stirring continuously to dissolve sugar. Simmer for 5 minutes. Set aside and cool completely. Remove mint leaves.
- Popsicles: In a blender, combine mint simple syrup with all remaining ingredients. Blend until smooth. Pour into popsicle molds and allow to freeze 8 hours to overnight.
