There are no tricky components here; you only need a few basic ingredients to make the best-baked carrot chips.
- Carrots: the star of the show; use any variety you prefer; stick with fresh, not frozen.
- Oil: any neutral oil will do such as avocado oil, olive oil, or melted coconut oil.
- Cornstarch: aids in absorbing moisture and providing a nice crispy texture for the chips.
- Spices: I love giving these chips a sweet and salty flavor. I use garlic powder, paprika, and salt.
Directions
- Start by slicing the carrots using a mandoline into thin, uniform slices.
- Add the carrots to a bowl and toss with olive oil. When the carrots are nicely coated, toss them with cornstarch, paprika, garlic powder, and salt.
- Place the carrots on a large baking sheet; it is okay if they overlap to start because they will shrink significantly as they cook. You just want to be sure that as they bake, you remove them from the oven and spread them out as close to a single layer as possible.

Crispy Carrot Chips
Ingredients
- 4 cups carrots thinly sliced into rounds
- 2 tablespoons olive oil
- 2 tablespoons corn starch
- ยฝ teaspoon garlic powder
- ยฝ teaspoon paprika
- salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees F.
- Using a mandoline thinly slice the carrots into uniform rounds.
- Toss the carrots in olive oil. When well coated toss them in the cornstarch and spices.
- Lightly spray a large baking sheet with cooking oil.
- Place the carrots on the baking sheet. It's okay if they overlap (they will shrink) but try to place them in one layer.
- Bake 10 minutes. Remove from the oven and flip the carrots (or just toss to move around) place in a single layer and bake another 10-15 minutes until they reach your desired crispness.

Storage
Place leftover carrot chips in an airtight container. I like to place a small napkin or paper towel in the container to help absorb any additional moisture. Keep in mind these chips won't stay crispy longer than a few hours. They still taste great, they just have a different texture.

If you do not have a mandoline it is possible to just use a vegetable peeler to create long, thin strips to make carrot chips. You will need to watch
I tried, it just didn't work for me. You get lovely roasted carrots but nothing resembling a chip like consistency.
I would love to say yes, but I do not reccomend it. Air fryers work by circulating hot air. These carrot slices are so thin that they will fly around the air fryer and get caught in the heating element. I would stick to the oven.
Are these a perfect sub for potato chips? No, of course not, they are carrot slices! However, the nutrition value is higher, the carbohydrates are lower and they are something you can easily incorporate into your daily diet.
