Crispy Carrot Chips

Craving a crunchy, guilt-free snack? These crispy carrot chips are just what you need! Thinly sliced rounds of fresh carrots are tossed in a perfect blend of spices and then baked until crisp.

Ingredients

  • 4 cups carrots thinly sliced into rounds
  • 2 tablespoons olive oil
  • 2 tablespoons corn starch
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • salt and pepper to taste

Instructions

  • Preheat the oven to 375 degrees F.
  • Using a mandoline thinly slice the carrots into uniform rounds.
  • Toss the carrots in olive oil. When well coated toss them in the cornstarch and spices.
  • Lightly spray a large baking sheet with cooking oil.
  • Place the carrots on the baking sheet. It's okay if they overlap (they will shrink) but try to place them in one layer.
  • Bake 10 minutes. Remove from the oven and flip the carrots (or just toss to move around) place in a single layer and bake another 10-15 minutes until they reach your desired crispness.

Notes

Baking Time: The baking time is merely a guide. This will depend on how big your carrots are, how you slice them and the desired texture. Keep a close eye on your carrot chips. Don't be afraid to shake the pan as needed for a nice, even cook. 
Sweet and Savory Sesame Sauce: 
  • ¼ cup mayonnaise
  • 1 tablespoon sweet chili garlic sauce
  • 1 teaspoon toasted sesame seed oil.
Do a quick taste test and adjust as needed.
