- 4 cups carrots thinly sliced into rounds
- 2 tablespoons olive oil
- 2 tablespoons corn starch
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- salt and pepper to taste
Preheat the oven to 375 degrees F.
Using a mandoline thinly slice the carrots into uniform rounds.
Toss the carrots in olive oil. When well coated toss them in the cornstarch and spices.
Lightly spray a large baking sheet with cooking oil.
Place the carrots on the baking sheet. It's okay if they overlap (they will shrink) but try to place them in one layer.
Bake 10 minutes. Remove from the oven and flip the carrots (or just toss to move around) place in a single layer and bake another 10-15 minutes until they reach your desired crispness.
Baking Time: The baking time is merely a guide. This will depend on how big your carrots are, how you slice them and the desired texture. Keep a close eye on your carrot chips. Don't be afraid to shake the pan as needed for a nice, even cook.
Sweet and Savory Sesame Sauce:
- ¼ cup mayonnaise
- 1 tablespoon sweet chili garlic sauce
- 1 teaspoon toasted sesame seed oil.
