These chipotle cornmeal waffle tostadas are such a fun twist on tostadas...crispy cornmeal waffles are topped with rotisserie chicken, crunchy veggies, and a delicious greek yogurt lime crema!

How is it Monday again? Where did the week-end go? What did I do again?
Even though I'm not going to a job during the week {I'm on maternity leave right now}, don't think that means that I don't have to work. Oh...I work!
It's a different type of work...not necessarily a physical type of work, more like a mentally-draining type of work. My 7-month old isn't so good at playing on his own, and he certainly doesn't understand the concept of "mommy needs to run to the bathroom" or "mommy needs a quick snack before she faints" or "mommy needs a 5th cup of coffee".
So you can imagine that even though 'work' doesn't end for me on Friday, it is so nice to have Ben home, an extra set of hands at home, and someone to talk to about things more complicated than 'Old MacDonald's Farm'. It will be fun when Kai can communicate with us! {Or maybe that just adds another layer of complication?}

We used to have breakfast-for-dinner growing up, normally a sweet waffle piled with fruit and sprinkled with powdered sugar. YUM.

I was thinking about waffles for dinner, and then got all philosophical and thought 'Hey! Waffles are kind of like tostadas'. This kind of breakthrough hasn't happened since that apple fell on Newton's head. Waffle tostadas!
These waffles are so yummy...crispy from the cornmeal, smoky from the chipotle and adobo sauce, and when you get a chipotle seed, a little bit spicy.
We topped our crispy chipotle cornmeal waffle tostadas with crunchy cabbage and radishes, shredded rotisserie chicken, and avocados.
Then we put a nice, big dollop of lime Greek yogurt 'crema'. Whatever you do, don't skip this yogurt topping! The lime, avocado and chipotle flavors are perfect together, and it really doesn't take much effort to whip up, {it's just Greek yogurt with lime juice and lime zest}.
I am happy to say that these waffle tostadas received the rare and elusive "YUMMMAAAAY!" yell from Ben. He is normally quite reserved but these waffles got him all worked up.
I am also happy to say that they were excellent for lunch the next day. To crisp up your waffles, just throw them in the toaster for a few minutes.

Tips & equipment for crispy cornmeal waffles
- My Nana’s old Philips waffle maker is amazing, but is no longer available.
- If I were to purchase a new waffle iron, I would go for either this one or this one! Here’s a great review on different waffle makers available these days!

Chipotle Cornmel Waffle Tostadas
Ingredients
Chipotle-Cornmeal Waffles
- 1 ½ cup all purpose flour 166g; or fluffed, spooned & levelled
- ¾ cups corn meal
- 1 tablespoon granulated sugar
- 4 teaspoons baking powder
- 2 eggs lightly beaten
- 1 ¾ cup milk
- ½ cup vegetable oil
- 2 chipotle peppers in adobo sauce minced finely
- 2 teaspoons adobo sauce
Lime Crema
- 1 cup greek yogurt
- zest from 1 lime
- juice from 1 lime 2 tbsp approximately
Waffle Toppings
- ⅛ cup vegetable oil
- ⅛ cup apple cider vinegar
- juice from ½ lime 1 tbsp approximately
- 3-4 cups cabbage chopped into strips
- 8 radishes sliced
- ½ cup cilantro roughly chopped
- 2 cups chicken breast cooked & shredded (roughly ½ rotisserie chicken)
- avocados chopped
Instructions
Chipotle-Cornmeal Waffles
- Pre-heat your waffle maker.
- In a medium bowl, combine flour, cornmeal, sugar and baking powder. In a separate bowl, lightly beat the eggs, then add milk and oil. Add wet ingredients to dry, mixing until just combined. Fold in the chipotle pepper and adobo sauce.
- Cook waffles according to waffle maker instructions.
Lime Crema
- Combine lime zest, lime juice and yogurt in a small bowl. Set aside.
Assembly
- Whisk together oil, apple cider vinegar and lime juice in the bottom of a large bowl. Add cabbage, radishes, cilantro and chicken. Toss to coat.
- Top each waffle with a cup of tostada toppings. Add a dollop of lime-yogurt crema and a spoonful of avocado. Garnish with cilantro.
