These mini peanut butter cup cheesecakes have a salty pretzel crust and a full-sized peanut butter cup hiding inside!  Highly addictive.

I am a complicated lady.

I like reality TV…and Netflix documentaries.  I love pineapple…but only on my pizza.  I can be talkative and loud…but I am also totally an introvert.

And now, just days after posting 29 Healthy Work Lunch Ideas, I have to go and post these…the ultimate, decadent, creamy, peanut-buttery little cheesecakes you ever will see.

I won’t blame you if you are confused.  But the thing is…I like my meals to be healthy, and my desserts to be desserts!  I don’t want to mess around with a good thing!  And peanut butter cup cheesecakes:  a very good thing.

And cheesecakes + peanut butter?  An even better thing!

And a salty pretzel crust?  Salty-sweet heaven!!

Not only are these guys packed with PB and cream cheese, but they are hiding one big old surprise: a full-sized Reese’s Peanut Butter Cup…so yep.  These are NOT going to be classified as healthy.  But who cares…they are SO delicious!

I don’t know, guys…peanut butter is just calling my name lately.

It told me that there weren’t enough PB recipes on this blog, given my addiction.  I had to take action.

First the No-Bake Peanut Butter Crunch Cereal Bars, and now these.  I think my PB cravings may just be satisfied for the time being.

And don’t worry: more healthy recipes to come.  For now, enjoy these mini peanut butter cup cheesecakes.  They are worth every calorie, I promise you 😉

Mini Peanut Butter Cup Cheesecakes with a Pretzel Crust

Ingredients
Pretzel Crust
  • 1 cup of 'pretzel dust', 100g of pretzels ground into crumbs.
  • 6 tbsp melted butter
Peanut Butter Mini Cheesecakes
  • 1 block of cream cheese {8 oz} softened to room temperature
  • ⅓ cup creamy peanut butter, at room temperature
  • ¼ cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 6 tablespoons heavy cream (called whipping cream in Canada, the kind in the carton)
  • 12 full-sized Reese's Peanut Butter Cups
Other
  • ½ cup melted peanut butter chips or chocolate chips for drizzling, if desired.
Instructions
  1. Pre-heat oven to 350°F. Line a standard-sized muffin tray with muffin papers and set aside.
  2. Mix together the ground pretzels and the melted butter.
  3. Press 1 tablespoon into the bottom of each muffin paper, pat down with your fingers to flatten.
  4. In a large bowl, beat together the cream cheese and peanut butter until smooth.
  5. Add the sugar and mix until no granules remain.
  6. Mix in the egg, vanilla, and cream until completely combined.
  7. Place a peanut butter cup in the center of each muffin paper. Spoon cheesecake mixture over top. Fill the muffin papers to about ¾ full.
  8. Bake for 15 or so minutes, center may have a slight jiggle will set up as they cool.
  9. Cool completely in the pan. Remove from pan and allow to set in the fridge, 2-3 hours.
  10. Drizzle with melted peanut butter chips and chocolate, if desired.
