Chipotle Shrimp Ingredients
- Shrimp: I prefer jumbo shrimp. You'll get more flavor by leaving the shells and tails on, but it's easier to eat if you remove them beforehand.
- Marinade: Olive oil, lime juice, and finely chopped chipotle pepper. These peppers are found canned in the Mexican food aisle. Be sure to wash your hands thoroughly after chopping!
- Maple Syrup: This sweet ingredient is brushed over the spicy grilled shrimp to help balance out the heat and provide more complex flavor.
How to Make Grilled Chipotle Shrimp
- Start by mixing your marinade ingredients (olive oil, lime juice, and finely chopped chipotle pepper). Stir in your shrimp, making sure every nook and cranny is covered.
- While the shrimp is marinating (no longer than 30 minutes), heat your grill to medium-high heat for about 15 minutes.
- Thread the shrimp onto skewers. If using wooden skewers, make sure to soak them in water to prevent burning.
- Place the shrimp skewers on the grill and cook for 2-3 minutes per side. Brush thoroughly with the maple syrup.

Storage
Chipotle shrimp can be safely stored in the fridge for up to 4 days after cooking, but I personally enjoy the flavor most within the first two days. If you plan to store leftovers, make sure you refrigerate shrimp within 2 hours of cooking.
- fridge- store in an air tight container in the fridge for up to 4 days (for best flavor, eat within 48 hours)
- reheat- on the grill or in a frying pan over medium heat for 2-3 minutes or until steaming hot
- do not reheat more than once
Marinade may be mixed together up to 4 days ahead, but remember the shrimp should only be marinated for a maximum of 30 minutes.

Chipotle Shrimp
Ingredients
- 1 lb shrimp thawed, deveined and peeled
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 chipotle pepper finely chopped
- ⅓ cup maple syrup
Instructions
- In a medium-sized bowl, stir together the olive oil, lime juice and chipotle pepper. Stir in the shrimp to coat.
- Allow the shrimp to marinate while you heat your barbecue to medium-high (15 or so minutes; see note 1).
- Skewer the shrimp (4-5 per skewer, don't overcrowd!).
- Grill 2-3 minutes per side, brushing thoroughly with the maple syrup.
