This no-bake almond joy cookie recipe takes less than 15 minutes to prepare, and doesn't even require an oven! An easy Christmas cookie to 'bake' with kids.
Are you ready for the holidays? I am at my parent's place and in full holiday mode!
So far there's been some pond skating, Christmas tree hunting, and hot-tubbing.
And best of all: there are so many hands around to help with Kai! Translation: I am putting my feet up and relaxing for the first time in a looong time.
I wish I had a batch of these almond joy cookies by my side to munch on while I read a book {READ A BOOK!! Is that not the true definition of relaxing?!} Unfortunately, these photos were taken when I was back in Calgary, making me think that maybe I should whip up another batch to have on hand here!.

OK so here's the part where I tell you that I have never had the good fortune in my life to taste an Almond Joy bar, and you all think "what a hack" and go running away from my website.

But I looked up this famous bar {Canadians! Do they even sell Almond Joy bars here?! Is it a Bounty Bar?}, and found that it has three of my favorite ingredients: chocolate, coconut, and almonds. And I thought "I can totally work with that".
Ok. Things to love about this no-bake almond joy cookie recipe:
One pot. No bowls, no mixer, no oven, just a pot. That's it!
They take maaaaybe 10 minutes to prepare. Another 5 to scoop. A few hours to set, but that doesn't count, right 😉 ?
They are chocolatey, coconutty and almondy! I added a touch of almond extract, sliced almonds, and a whole almond to top these cuties, and they are loaded with coconut. I used Nutella to bring that delicious chocolatey flavor, and to help bind the cookies. I also drizzled the tops with melted chocolate, a totally optional but delicious step.
They are the ultimate fast and easy holiday baking. You can keep them for yourself or give them as a gift.
Yep, definitely will be whipping up another batch of these almond joy cookies to eat while I read my book and stare at my favorite mountain. Aka: RELAX!!!
Tips & equipment for the perfect no bake almond joy cookies
- use a 1.5 tablespoon cookie scoop to get perfectly round no bake cookies
- store in an 8 cup glass meal prep container with wax paper between layers

No-Bake Almond Joy Cookie Recipe
Ingredients
- ¼ cup butter
- ¼ cup milk
- ½ cup Nutella
- ¼ tsp almond extract
- 1 cup sliced almonds
- 1 ½ cups sweetened shredded coconut
- 16 whole almonds
- ½ cup chocolate chips {for drizzle}
Instructions
- In a large pot, combine the butter, milk, Nutella and almond extract. Heat over medium/low until butter is melted and everything is completely combined.
- Stir in the almonds and coconut, until completely coated.
- Scoop into 1.5 tbsp mounds onto wax paper. Press firmly to have well formed cookies.
- Gently press a whole almond onto the top of each cookie.
- Melt the chocolate chips in a double boiler, transfer to a plastic bag, snip the corner, and drizzle over cookies.
- Allow to set at room temperature for approximately 2 hours.
- Will keep in a sealed container for up to a week.

I left the cookies out for a day and they still did not set. I'm thinking there might be an error in ingredients. I put them in the frig as I read from another reader. I gave it a 4 because the batter did taste delicious.

Hi... no sure wht I did differently, but mine aren't firm and didn't set up well like the picture. Pretty gooey. I put them in the fridge which helped.
I think they'll still be eat up tho... 🙂

Thanks, Azu! If you try almond butter, you will likely need to add some sugar, since Nutella adds a bit of sweetness...I would try maybe 1/4 cup and see if it's sweet enough for you? Let me know how it goes, sounds like a delicious substitution!
