We are back for another Lunch Prep Challenge, and I hope you are excited to get started!
Our first set of recipes & shopping list will be going out next Wednesday, December 30, and our first prep day is Sunday January 3!
What to expect:
- each week you will receive an e-mail with 1 main course recipe and 2 snacks, plus a shopping list
- each week I show you exactly how to prep your lunches in a video prep tutorial. These tutorials are packed with tips, tricks, and suggestions for variations on each recipe and I recommend you watch them if you have any questions about the recipes we are making.
- tons of swaps and suggestions to make the recipes vegan, gluten-free, nut-free and low-carb. If you have any other questions about swaps for your dietary needs, I suggest posting in our Facebook group, as there are people just like you making these recipes work for them!

1. Can you explain the meal plan? Is all that food eaten for your lunch?

This challenge is a ‘packed lunch’ challenge, with two snacks and a main course per day. You can choose when you eat the snacks (morning vs afternoon), or if you eat them both.
2. Why are there only 4 main course recipes?
Due to food safety issues and the fact that these meals are not freezer-friendly, there are only 4 days of main course meals. Plan ahead for this by incorporating leftovers into your Friday lunch, OR treat yo-self for your hard work by eating out!
3. Are the recipes gluten free? Vegan? Low carb? Allergy friendly?
The recipes as written are not strictly in any of these categories, however recipes are easily converted. Sometimes suggestions will be made and sometimes entirely different recipes will be provided for you!
We have an amazing community of meal preppers in our Facebook group who blow me away with their creativity and make the recipes fit their dietary needs. Feel free to ask for suggestions in the group!
4. Help! I lost my recipe e-mail!
Don’t worry, I link frequently back to the recipes used in the challenge. Bookmark this page and check back for the recipes as they are sent out!
5. What storage containers/supplies will we need for the challenge?
You will need:
- four 2-cup capacity storage containers for main course recipes
- 5 half cup capacity storage containers for dips
- Five bags or 2 cup containers to store the second snack option

6. Do you provide nutritional information?
I do provide nutritional information, however I want to emphasize that I am not a nutritionist or dietician, and these are strictly estimates calculated using MyFitnessPal, and are not guaranteed to be accurate. See my nutritional disclaimer here.
For snacks, I am aiming for 200 calories or less, and for main courses, I aim to be around 400 calories (but I will never sacrifice flavor for cutting calories–sorry!). Each main course will have a protein, lots of veggies, and a grain. I try to make sure snacks also contain protein to help keep us full until the next meal.
You will receive your first set of recipes and shopping list on Wednesday, December 30. It is up to you to decide when you will prepare your lunches, however I recommend doing it on the Sunday (January 3, since the main course lunch can only store in the fridge for 4 days)
