Here in Canada we had a long week-end...Queen Victoria's birthday. I think it's funny that we get a day off work for her birthday...but I am not complaining!
May long week-end usually means a few things: camping {where you will absolutely, most definitely get snowed on}, gardening {frost season, fingers crossed, is over}, and barbecues. It's the unofficial start of summer!
Well...no camping for us with a 7-month old. And no gardening because the weather wasn't all that great. So that left us with barbecuing. We had jerk chicken kebabs, grilled yam fries and corn on the cob.
Washed down with some Strawberry-Rhubarb Rosé Sangria!

This is the time of year when I get obsessed with all things rhubarb. Unfortunately, I am not so lucky as to have a thriving rhubarb patch. My rhubarb currently has piddly little stems that are only just starting to sprout...it is not a happy camper.

So I had to get my rhubarb from the grocery store, which feels sacrilegious, because isn't rhubarb supposed to be the one thing that a black-thumbed gardener can grow?
Anyway. Rhubarb in hand, I had some fun in the kitchen. First I remade {and re-photographed} my rhubarb coffee cake with nutmeg & pecan streusel. Then I got inspired to make a rhubarby drink...this Rosé Sangria!
In case you're wondering where the rhubarb is in these photos, it was in the car. And Kai was asleep in the car {Ben was hanging out in the car waiting for him to wake up on his own}. Future parents, there is a very important rule I've learned. Don't wake a sleeping baby. Just don't. It never ends well.
So. No rhubarb in the photos. But it was in this sangria, trust me!
This rosé sangria recipe is adapted from Martha Stewart's recipe, with a few changes. I swapped the prosecco for rosé, orange for lime, added mint, and altered the rhubarb simple syrup.
I know...you have to make a simple syrup. But it is so easy. Water + sugar + rhubarb. Simmer 5 minutes. Strain off rhubarb. Done.
The wine is 'marinated' for a few hours with the strawberries, mint, lime. This rosé sangria takes on all of these flavors, and sweet, tart, rhubarbiness from the simple syrup. The strawberries absorb the sangria and are the juiciest, most delicious part of the whole drink. Take my advice: leave no strawberry behind. Eat them all.
You can serve this straight up, or with club soda. I actually preferred it without the club soda. I recommend reducing the sugar in the simple syrup if you serve it without the club soda {see the note on the recipe}.
It is such an easy drink to make, and a fun, pink {!}, summery cocktail. Perfect for ringing in the 'unofficial' start to summer. YAY!

Strawberry-Rhubarb Rosé Sangria
Ingredients
Rhubarb Simple Syrup
- ½ cup water
- ½ cup sugar
- 3-4 cups rhubarb (2 large stalks; diced into 1 inch cubes)
Sangria
- 750 mL rosé (1 bottle)
- 1 lime (sliced)
- ¼ cup mint leaves (torn & loosely packed)
- 2 cups strawberries (quartered)
- 1 recipe simple syrup (cooled & strained)
To serve:
- Club soda or seltzer; to taste
- Ice
Instructions
Rhubarb Simple Syrup
- In a medium pot, combine sugar and water. Bring to a boil, stirring until sugar is dissolved.
- Add rhubarb, stir and cover. Simmer for 5 minutes. Remove from heat.
- Cool and strain off rhubarb before adding to sangria.
Sangria
- Combine all ingredients in a pitcher. Allow to 'marinate' in the fridge for 4 hours.
- Serve with seltzer or club soda (optional) over ice.

Tips:
If you plan on serving without the selzer/club soda, remove ¼ cup of sugar from the simple syrup.
