Easy Bistro Boxes 3 Ways

 These easy bistro lunch boxes can be prepared ahead of time for an easy grab and go lunch!

Ingredients

1. Mexican Bean Salad (serves 6; see note)

  • 19 oz can of black beans drained and rinsed
  • 12 oz can of corn kernels drained and rinsed
  • 1 red bell pepper finely chopped
  • 1 cup cherry tomatoes quartered
  • 1/4 cup red onion finely chopped

Vinaigrette

  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon lime juice
  • 1/4 teaspoon dijon mustard
  • 1/2 tablespoon honey

Trail Mix (for one bistro box)

  • 1 tablespoon pepitas
  • 1 tablespoon almonds
  • 1 tablespoon dark chocolate chips

Other

  • Kiwi fruit or pineapple chunks
  • 1 package Sanissimo Salmas crackers

2. Apple, Smoked Gouda and Turkey Bistro Lunch Boxes

  • 1 apple (sliced; see *note)
  • 1.5 oz smoked gouda (cut into wedges)
  • 2 oz deli turkey slices
  • carrot sticks (or other veggies)
  • 1 package Sanissimo Salmas crackers

Trail Mix

  • 1 tablespoon almonds
  • 1 tablespoon dried cranberries
  • 1 tablespoon chocolate chips

3. Deconstructed Greek Salad Bistro Lunch Boxes

  • 5-6 slices cucumber
  • 1/3 cup cherry tomatoes
  • 1/4 cup olives
  • 2 oz deli turkey slices
  • 2 tablespoons tzatziki
  • 1 package Sanissimo Salmas crackers
  • grapes (or other fruit)

Instructions

1. Mexican Bean Salad Bistro Box

  • Toss together all Mexican bean salad ingredients in the vinaigrette. Portion out into bistro boxes or small storage containers. Keeps for up to 5 days.
  • Stir together the trail mix ingredients and add to a small silicone baking cup or storage container
  • Add fruit portion and crackers.

2. Apple, Smoked Gouda and Turkey Bistro Lunch Boxes

  • Assemble all ingredients in your box and store in the fridge for up to 3 days.

3. Deconstructed Greek Salad Bistro Lunch Boxes

  • Portion out all ingredients into your bistro boxes and store for up to 3 days.

Notes

These Mexican bean salad bistro lunch boxes can be assembled up to 3 days ahead; you may wish to keep the trail mix separate until the day you serve.
The salad serves 6, but keeps well in the fridge. Use it as a dinner side dish!
*Either bring your apples whole and slice them fresh, or slice ahead and dip them in a water mixture of 1 cup water, 1 tablespoon lemon juice. They will stay fresh for 1-2 days.
