  • ¼ cup walnuts (35 grams)
  • ¼ cup sunflower seeds (37 grams)
  • 2 garlic cloves , finelysliced
  • ½ medium onion (90 grams after peeled, roughly chopped)
  • 2 (14 oz) cans black beans; drained, rinsed and patted dry
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fine sea salt
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ cup panko bread crumbs
  • 2 large eggs
  • 1 tablespoon olive oil optional

Instructions

  • Before you begin, you must drain, rinse, and pat DRY the black beans.
  • Preheat oven to 375°F and line a baking sheet with parchment paper. Optionally, brush with olive oil for crispier patties.
  • In a food processor, pulse walnuts and sunflower seeds until finely chopped. Add onion and garlic, pulse again, then add black beans, Worcestershire sauce, salt, onion powder, paprika, breadcrumbs, and eggs. Pulse until a thick, chunky paste forms.
  • Scrape down the edges of the bowl so everything is combined. Form heaping ½-cup patties, about 1 ¼ inch thick.
  • Place on the baking sheet and brush tops with olive oil if desired.
  • Bake for 10 minutes, flip, then bake 15 more minutes. For a firmer burger, reduce heat to 300°F and bake an additional 20 minutes.
  • Let rest 5 minutes before serving. Enjoy!
