Blueberry-Mint Yogurt Pops

Simple Syrup:
- ⅔ cups water
- ⅔ cups granulated sugar
- ⅔ cups mint leaves loosely packed
Popsicles:
- 3 cups fresh blueberries
- 1 cup plain yogurt
- 5 teaspoons honey
- 4 teaspoons lemon juice
Simple Syrup Combine sugar, water and mint leaves in a small pot. Bring to a boil, stirring continuously to dissolve sugar. Simmer for 5 minutes. Set aside and cool completely. Remove mint leaves.
Popsicles: In a blender, combine mint simple syrup with all remaining ingredients. Blend until smooth. Pour into popsicle molds and allow to freeze 8 hours to overnight.
