Blueberry-Mint Yogurt Pops

A healthy cold treat for the summer...packed with blueberries and yogurt, with a hint of mint and honey.

Ingredients

Simple Syrup:

  • cups water
  • cups granulated sugar
  • cups mint leaves loosely packed

Popsicles:

  • 3 cups fresh blueberries
  • 1 cup plain yogurt
  • 5 teaspoons honey
  • 4 teaspoons lemon juice

Instructions

  • Simple Syrup Combine sugar, water and mint leaves in a small pot. Bring to a boil, stirring continuously to dissolve sugar. Simmer for 5 minutes. Set aside and cool completely. Remove mint leaves.
  • Popsicles: In a blender, combine mint simple syrup with all remaining ingredients. Blend until smooth. Pour into popsicle molds and allow to freeze 8 hours to overnight.

Notes

Makes 8 large popsicles.
