Chipotle Grilled Shrimp Skewers with Maple Glaze

These super simple chipotle grilled shrimp skewers with maple glaze have only 5 ingredients, and are on your table in under 30 minutes!

Ingredients

  • 1 lb shrimp thawed, deveined and peeled
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 chipotle pepper finely chopped
  • ½ cup maple syrup

Instructions

  • In a medium-sized bowl, stir together the olive oil, lime juice and chipotle pepper. Stir in the shrimp to coat.
  • Allow the shrimp to marinate while you heat your barbecue to medium-high (15 or so minutes; see note 1).
  • Skewer the shrimp (4-5 per skewer, don't overcrowd!).
  • Grill 2-3 minutes per side, brushing thoroughly with the maple syrup.

Notes

1- you may marinate for up to 30 minutes, but I do not recommend marinating for any longer than that.
 
2- While I left the peels on for the photos, the shrimp are much easier to eat if you peel them before marinating & grilling.
 
Storage
After cooking through, shrimp may be stored in an air tight container in the fridge for up to 4 days (though they have the best flavor if eaten within 48 hours). 
 
Reheat
Heat in a frying pan or on the grill over medium heat until steaming hot. Do not reheat more than once.
 
Wooden skewers
If using wooden skewers, soak them in cold water 30 minutes prior to grilling to avoid them burning and breaking.
 
Glazing
Use a long handled silicone brush to brush the maple syrup on the shrimp while grilling.
