Ingredients

  • 2 medium sweet potatoes
  • 2-3 tablespoons olive oil
  • salt and pepper to taste
  • 1 15 ounce can black beans, drained and rinsed
  • 3 cups cooked shredded Honey Chipotle Chicken
  • ½ cup sour cream
  • 2 teaspoons adobo sauce from the can of chipotle or hot sauce

Instructions

  • Preheat the oven to 400 degrees F.
  • Slice the sweet potato lengthwise and drizzle the cut side with oil, sprinkle with salt and pepper.
