Fruit Yogurt Parfaits

- 4.5 cups Greek Yogurt I used Oikos Pro Greek Yogurt in nutrition calculation
For the fruit sauce
- 3 cups fresh fruit
- 1 tbsp water
- ½ tsp lemon juice
- 2 tbsp sweetener see notes
Make the fruit sauce
To make the fresh fruit sauce add the fruit, water and lemon juice in a small saucepan and bring to a boil. Reduce the heat and allow the sauce to summer on low for 10-15 minutes.
Stir the sauce occasionally and use your spatula to help mash the fruit as it cooks.
Once the liquid has reduced and the sauce has thickened to your liking remove from heat and set aside.
Once the sauce has cooled completely use an immersion blender to blend until smooth, if desired.
- Sweetener: You can use any granular sweetener like sugar, monk fruit, Swerve, etc. Because some fruit may be more or less sweet, start with the two tablespoons. As it cooks, taste occasionally and add a bit more if needed.
- You can use any fruit in this sauce recipe, but different fruits do cook down to different amounts. 3 cups of fruit will result in about 1.5 cups of fruit sauce, leaving ¼ cup for each jar.
