Cajun Chicken Wrap Recipe

This cajun chicken wrap recipe is perfect for meal prep! Ready in under 20 minutes, packed full of veggies, and SO delicious for lunches or dinners!

Equipment

Ingredients

  • 2 tablespoons olive oil
  • 1 lb boneless skinless chicken breasts roughly 2 large; sliced into ½ inch pieces; see note 1
  • 3 tablespoons cajun seasoning note 2
  • 2 bell peppers sliced into strips
  • 1 red onion sliced into strips
  • 2 cups cherry tomatoes quartered
  • 4 large tortillas to serve

Instructions

  • Cook Chicken - Heat olive oil in a medium non-stick pan over medium heat. Add the chicken, and sprinkle with 1 ½ tablespoons of cajun seasoning. Cook, stirring frequently, for 5-7 minutes, until cooked through.

  • Sautée Veggies - Remove the chicken from the pan and place in a clean bowl. Add the bell pepper and onion to the pan, sprinkling with another 1 ½ tablespoons of cajun seasoning. Cook for 5 or so minutes, until slightly softened.
    Add the tomatoes to the pan, cook for 1 minute until soft. Add back the chicken, toss everything up, then remove from the heat.
  • Portion - (For meal prep only)- Divide between four 2-cup capacity storage containers.
  • Serve - When you are ready to serve, spoon heated filling into wraps or tortillas and enjoy!

Notes

  1. feel free to swap the chicken breast for chicken thighs; pressed and cubed tofu might work well for a vegetarian version.
  2. pay special attention to brand, as some can be really spicy! Readers have reported Slap ya Mama (😂) is too spicy for this recipe. We've used a very mild brands (Club House, McKormick). When in doubt, feel free to make your own homemade cajun seasoning and adjust the spiciness to your liking.
  3. cauliflower rice, zucchini noodles or strips, and broccoli slaw are all completely non-traditional yet viable options that could work in this recipe
Storage
Cool completely, then portion filling out into meal prep containers. Refrigerate for up to 4 days. You can serve it cold or reheated. Do not spoon into tortillas until just before you serve.
