Cajun Sweet Potato Mash
- 2 sweet potatoes medium; scrubbed
- ¼ teaspoon salt
- 1 teaspoon cajun seasoning see note 1
- 1 tablespoon butter
Mini BBQ Meatloaves
- 1 lb lean ground beef see note 2
- 1 egg
- ¼ cup breadcrumbs
- 1 teaspoon worcestershire sauce
- ½ teaspoon salt
- ½ cup barbecue sauce divided
Other
- 12 oz green beans washed, ends trimmed if you prefer
BBQ Mini Meatloaves
Prepare BBQ meatloaves- Heat oven to 350°F and spray 8 cavities of a standard-sized muffin pan with oil. In a large bowl, mix together the ground beef, egg, breadcrumbs, worcestershire sauce, salt and ¼ cup of the BBQ sauce
Bake- Press the mixture into the 8 cavities, pressing into a meatloaf shape. Bake for 20 minutes, then brush tops with ¼ cup more BBQ sauce. Return to the oven for an additional 5 minutes.
1- be careful when using cajun seasoning as some brands are extremely spicy! I used Clubhouse brand which is very mild
2- extra lean ground beef works great in this recipe; you can swap for ground turkey without adjusting seasonings or cook time
Storage
Store in an air tight container in the fridge for up to 4 days.
Reheating
Reheat in the microwave until steaming hot, and enjoy!
