- 2 lbs baby potatoes (halved; any color works)
- 3 tablespoons olive oil
- 1 teaspoon dried thyme leaves
- ½ teaspoon oregano
- ½ teaspoon salt
Toss potatoes in olive oil, thyme, oregano and salt. Transfer to a 6 quart slow cooker.
Cook on high for 3-4 hours.
