Peel and core the apples. I cut my apples into eighths, but if you want thinner slices to use in baked goods, then cut them even smaller!
Soak the apple slices in a lemon juice bath for 5 minutes. 4 cups water + 2 tablespoons lemon juice.
Drain. Either dump the apples into a colander or scoop them out with a slotted spoon. Let them sit on a baking sheet propped up on one end to drain thoroughly.
Arrange on a large baking sheet. I love these baker's half sheets. Freeze for 4 hours- overnight.
