Wash the peaches.
Cut into slices, (no peeling required).The easiest way to cut a peach is to run a small paring knife all the way around the peach, pull the two halves, then remove the pit. After this, it’s easy to slice. Soak the peach slices in a lemon juice bath for 5 minutes. 4 cups water + 2 tablespoons lemon juice.
Drain. Either dump the peaches into a colander or scoop them out with a slotted spoon. Let them sit on a baking sheet propped up on one end to drain more throroughly.
Arrange on a large baking sheet. I love these baker's half sheets. Freeze for 4 hours- overnight.
