• olive oil  • onion  • garlic • ginger • curry powder • ground cumin • ground coriander • garam masala • turmeric • salt • stock • red lentils • can of diced tomatoes

What You Need:

Sautée

Add the onion, and cook for 5-7 minutes, until soft.

Add Spices

Add all the spices.

Combine

Add around 1 cup of stock, and use a spatula to scrape all the bits off the bottom of the pan. Add the rest of the stock, the lentils, and diced tomatoes.

Simmer

Stir, cover, bring to a simmer, then cook (covered), for 30 minutes.

Serve

Serve with rice and naan bread.
