Ingredients

  • 1 tablespoon olive oil
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 lb pork tenderloin see note 1

Instructions

  • Mix up spice blend- In a small bowl, mix together the onion powder, garlic powder, salt, pepper, basil and oregano.

  • Prep pork tenderloin- Use a knife to wiggle under the silver skin of the pork (the vein of fat and connective tissue along the top of the tenderloin). Carefully cut it off.
Next, brush all sides of the tenderloin with olive oil, then rub the spice blend in. It's important to use your hands to press the rub onto the surface of the pork to help it stick.

  • Cook- Pre-heat air fryer to 400°F for at least 5 minutes, then add the tenderloin to the basket or lower tray. Cook for 15 minutes, flipping halfway through.

  • Check temperature- Use an instant read thermometer to determine if the pork tenderloin is ready to come out of the air fryer:
    medium rare- 145-150°F
    medium- 150-155°F
    medium well- 155-160°F

  • Rest (note 2)Transfer tenderloin to a cutting board before slicing. You can cover it with a dish if you'd like to keep it warmer. After resting, slice and enjoy!

Notes

1- if your pork tenderloin is larger than 1 lb, you'll need to increase the cook time. Use an instant read thermometer, and remove your pork when it reaches the following temperature:
  • medium rare- 145-150°F
  • medium- 150-155°F
  • medium well- 155-160°F
2- Resting is the KEY to a juicy pork tenderloin as it allows the juices to settle. I noticed that a 10 minute rest yielded a substantially juicier pork tenderloin than a 5 minute rest, even when I accidentally overcooked the tenderloin.
Storage
Pork tenderloin is best served fresh as it tends to dry out as it is stored.
To store, cool completely before storing in an air tight container in the fridge for up to 4 days.
Reheat
Heat in the microwave or in a covered frying pan over medium heat, or until steaming hot.
