Ingredients

  • 15 oz can diced tomatoes including juices
  • 15 oz can black beans drained & rinsed
  • 12 oz can corn kernels drained
  • 13 oz can of tomato sauce passata; not ketchup
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • 6 cups sweet potato cubes 1 ½- 2 inches; roughly 2 medium sweet potatoes
  • 1 onion diced

Instructions

  • Combine all ingredients in the base of a large (5- 6 quart) slow cooker.
  • Cook on low for 6-8 hours.
  • Serve with tortilla chips, coconut yogurt, and avocado.
