This low carb ground beef stir fry is perfect for a low carb lunch! With simple ingredients, you can prepare 4 portions in under 25 minutes, and each serving has just 7 g net carbs.

Stir Fry
- 4 cups riced cauliflower
- 1 tablespoon olive oil
- 1 lb ground beef
- 4 cloves garlic (minced)
- 1 tablespoon ginger (grated or finely chopped)
Shake stir fry sauce together and set aside.
Add olive oil to a clean pan. Add cauliflower rice and cook for 2-3 minutes until slightly soft. DO NOT overcook. Remove from pan.
Return pan to the heat, and cook ground beef, breaking it up with a spatula into small pieces. Cook for 7-10 minutes, until no longer pink.
Drain the pan if there is excess grease. Make a space in the middle of the beef and add the garlic and ginger. Simmer for 1 minute until fragrant.
Add the sauce. Toss beef to coat. Simmer for 2-3 minutes until it is slightly thickened and absorbed into the beef.
Remove from heat and allow to cool slightly before serving over the cauliflower rice.
Storage
This works well for meal prep. DO NOT overcook the cauliflower rice as it will cook a second time when reheated.
Portion out cauliflower rice and ground beef + sauce into four meal prep containers. Cool completely and store in the fridge for up to 4 days.
Reheat until steaming hot.
