Ingredients

Low Carb Stir Fry Sauce

Stir Fry

  • 4 cups riced cauliflower
  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (grated or finely chopped)

Instructions

  • Shake stir fry sauce together and set aside.
  • Add olive oil to a clean pan. Add cauliflower rice and cook for 2-3 minutes until slightly soft. DO NOT overcook. Remove from pan.
  • Return pan to the heat, and cook ground beef, breaking it up with a spatula into small pieces. Cook for 7-10 minutes, until no longer pink.
  • Drain the pan if there is excess grease. Make a space in the middle of the beef and add the garlic and ginger. Simmer for 1 minute until fragrant.
  • Add the sauce. Toss beef to coat. Simmer for 2-3 minutes until it is slightly thickened and absorbed into the beef.
  • Remove from heat and allow to cool slightly before serving over the cauliflower rice.

Storage

  • This works well for meal prep. DO NOT overcook the cauliflower rice as it will cook a second time when reheated.
  • Portion out cauliflower rice and ground beef + sauce into four meal prep containers. Cool completely and store in the fridge for up to 4 days.
  • Reheat until steaming hot.
