Coconut Caramel Coffee Magic Bars
Magic bars, seven layer bars or hello dolly bars. Whatever you call them, these guys get a caffeinated make-over with coconut, caramel, coffee and chocolate.

- 2 ½ cups chocolate cookie crumbs {I used Oreo}
- ½ cup butter {melted}
- 1 can {300mL} of Dulce De Leche flavored sweetened condensed milk {I used Eagle Brand}
- 2 tbsp espresso powder
- 1 cup + ¼ cup sweetened shredded coconut {divided}
- 1 cup semi-sweet chocolate chips
Pre-heat oven to 350 F. Line a 9 X 13 pan with aluminum foil and spray with spray oil {don't forget the sides!}
In a microwave-safe bowl, melt the butter. Stir in the chocolate cookie crumbs until moistened. Press gently into the bottom of the pan.
In a medium bowl, mix together the sweetened condensed milk and the espresso powder until completely combined. Spread evenly over cookie crumbs.
Sprinkle with 1 cup of shredded coconut and 1 cup of chocolate chips.
Bake for 25 minutes, bars should be lightly browned. Sprinkle with remaining cup of coconut, and allow to cool completely and set up {approximately 2 hours}.
