Slow Cooker Garlic & Parmesan Mashed Cauliflower

This garlic and parmesan mashed cauliflower is a low calorie, low carb, healthy substitute for mashed potatoes.  Smooth and delicious, perfect as a Thanksgiving side dish!

Ingredients

  • 1 head cauliflower broken into florets
  • 6 sprigs thyme
  • 6 cloves garlic smashed with the back of a knife
  • ½ teaspoon salt
  • 1 cup stock

Instructions

  • Cook on low for 4 hours.
  • Stir once half way through if possible.
  • Remove thyme stems from the pot, and mash with a potato masher. Use an immersion blender for smoothest puree.
