Broccoli Salad Recipe with Almonds and Quinoa

¾ cup quinoa  1 head broccoli  ½ cup dried cranberries ½ cup feta cheese  apple cider poppy seed dressing

what you'll need:

cook quinoa

cook quinoa ahead of time to allow it time to cool.

vinaigrette

in a mason jar or salad dressing shaker, combine dressing ingredients. shake until combined, then set aside.

toss together

combine the cooled quinoa, broccoli, dried cranberries, feta cheese and sliced almonds. drizzle with the vinaigrette and toss.

jar salads

Store dressed salad in the fridge for up to 24 hours. keep the undressed salad in the fridge for up to 4 days, tossing it up in the dressing just before serving.
