A refreshing, sparkling rhubarb drink. Best enjoyed on the deck on a nice warm day! Can be enjoyed with or without rum.


rhubarb simple syrup

  • 2 cups water
  • 1 cup granulated sugar
  • 4 cups rhubarb stalks (cut into 1 inch pieces)

  • ice
  • 1/2 cup rhubarb simple syrup
  • 3 mint leaves (torn)
  • Squeeze lime
  • club soda (to taste)

1 To make rhubarb simple syrup: combine sugar and water in a small pot. Bring to a boil, stirring, until sugar is dissolved. Add rhubarb and simmer for 15 minutes. Allow to cool, and remove/strain rhubarb leaves before use.
(Enough simple syrup for 4 drinks).

2 To make mojito: Add mint leaves to glass, muddling them. Fill glass with ice and add rhubarb simple syrup (1/2 cup or to taste). Add a squeeze of lime and soda water to taste.


To make this drink a 'true' mojito, add 2 oz of white rum and add a touch more rhubarb simple syrup.
