With this Strawberry Mojito Recipe, you don’t have to choose between dessert or cocktail. A scoop of sorbet means this drink can be both!
TGI…T? Can we please make TGIT a thing?
A thing where we can pretend that the week is over, pat ourselves on the back for a job well done, and sip a nice, refreshing cocktail? Even though there might still be another day left in the work week? Pleeease?
Because if so, I have the perfect cocktail in mind for you with this strawberry mojito recipe. And there’s sorbet involved! So technically it can just be your Thursday night dessert.
And if not, well we can save this one until the real-deal TGIF. And/or Mother’s Day.
I’ve been on a major cocktail hiatus lately…in fact there hasn’t been a drink, smoothie, any sort of beverage since New Year’s! Can you believe it?!
I guess I figured that in the world of useful recipes, cocktails just don’t rank that high for me. By the time that I’m done my day, I don’t have the energy to think about simple syrups or any fancy garnishes.
BUT. This recipe. No simple syrups, no fancy garnishes or ingredients (unless you count sorbet as ‘fancy’). Aka: ready in under 5 minutes. AND: You totally get to pretend you’re a tween again because your drink is fizzy and pink and there’s ice cream in it.
With this strawberry mojito recipe, the more sorbet, the better. I recommend filling your glass up with as much sorbet as you can fit. ^^ Still not enough! More sorbet!!
Basically, this is how it goes: Put some strawberries, mint, and lime (and RUM!!) in the bottom of a glass and muddle it up. Add lotsa sorbet. Add soda water to taste.
Close your eyes, take a sip, pretend you are on a beach in Cuba.
Better yet, pretend it’s Friday.

- 2 strawberries, sliced
- 2 wedges lime
- 6 small mint leaves
- 1½ ounces light rum
- ½ cup (approximately) berry sorbet
- soda water, to taste
- In the bottom of a medium glass, muddle together the strawberries, lime and mint. You can use the handle of a wooden spoon if you don't have a muddler.
- Add the rum and sorbet.
- Pour the soda water over top, stir to mix, and add more sorbet if desired.
- Serve immediately
