I used to follow fashion trends…I maybe definitely had ‘The Rachel’ hair cut in the 90’s and rocked the skinny jeans in the 00’s.  And I used to suffer for my fashion choices, too!  I can vividly remember taking public transit in -30 degree (celsius) weather in a mini skirt on my way to the bar.  Yep.  That was me.

These days it’s comfy shoes.  Comfy pants.  And comfier trends for me.

Like one pot pasta.  I have avoided this food trend until now.  And guess what I’ve only just discovered?  One pot meals are not just about convenience, they also taste amazing!

I definitely thought that one pot pasta meals were just a silly thing that you saw on pinterest, but wouldn’t turn out, and would taste horribly.

Oh how I was wrong!

One week-night last week, when we had no dinner planned, it was 5 pm, and the fridge was looking pretty bare, I decided I would give this Southern Living one pot pasta recipe a try.  It was basically full of pantry staples: dried pasta, canned diced tomatoes, dried spices.  My expectations were very low.

But upon tasting the first bite, I was completely blown away!  It was so incredibly flavorful!  As the pasta cooks in the spices and tomatoes, it absorbs so much flavor, and as it cooks, the starch from the pasta makes the sauce sort of creamy!

After tasting that dish, I decided to make my own version of it.  In my version, I cooked chicken breast in the pot first, then tossed in the stock, veggies and pasta.  At the end, I threw in some cherry tomatoes, feta, fresh dill, and spinach.

Side note- there was supposed to be waaay more spinach in this dish, however someone…ahem: Ben…came home with a spinach/garden green mix, and I had to pick out the spinach.  So feel free to go nuts with the spinach if that’s your thing!

Anywho.  My version still has the creamy and flavorful pasta taste from the original dish, but the addition of feta, dill and cherry tomatoes really brightens and freshens things up.

And while they aren’t in the photos, we enjoyed ours with a sprinkling of toasted slivered almonds.  It was going to be pine nuts…but at $8 for 100g, I just couldn’t buy them.

A fast and easy pasta dinner that is all cooked in one pot! Feta cheese, cherry tomatoes and dill give this pasta a fresh and delicious taste.

Serves: 6-8
Ingredients
  • 1 tbsp olive oil
  • 2 large chicken breasts, cut into 1 inch pieces
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 7 oz/200g mushrooms, washed and sliced
  • ½ tsp red pepper flakes
  • ½ tsp kosher salt
  • 28 oz diced tomatoes (including liquid)
  • 2 cups chicken stock
  • 12 oz dried pasta (I used small shells)
Add at the end:
  • 1 pint tomatoes, rinsed
  • 2-4 cups spinach
  • ½ cup feta cheese, crumbled
  • 2 tbsp fresh dill, chopped
Instructions
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken, and saute for 5 or so minutes, until cooked through. Remove chicken from pot.
  3. Add the onion to the pot and cook, stirring occasionally, until translucent. Add the garlic and stir for one minute.
  4. Add the chicken back to the pot, along with the mushrooms, red pepper flakes, salt, diced tomatoes, chicken stock, and pasta. Stir to combine and cover.
  5. Bring to a boil, then cook for 10-12 more minutes, stirring occasionally. Pasta should be cooked through.
  6. Remove pot from heat, then stir in the tomatoes, feta cheese, and spinach. Cover the pot and let stand for 5 or so minutes, until tomatoes and spinach are soft.
  7. Serve with Parmesan cheese, to taste.
Notes
This pasta is excellent with a sprinkling of nuts. I recommend pine nuts, or a cheaper alternative, slivered almonds
