one-potThis chicken and butternut squash soup is packed full of big flavors: leek, butternut squash, and last (but not least), bacon!  Perfect for a cold wintery day.

 

Staying home with Kai on maternity leave for a year, I missed some things about work.

I missed my work friends.  I missed doing my research project.  I missed the routine of it all.  But one thing I didn’t miss, not one little bit, was the knot in my stomach that I get with deadlines and public speaking and the feeling that everyone is so much smarter than me and the all-round pressure that comes with doing your PhD.

And now I’m in my final year, that knot is back…with deadlines to get data for a paper, and the need to graduate…because I NEED TO GRADUATE!  Sorry for the all-caps, but I really need to finish my PhD.  I can see the finish line, but it feels so far away.

When I get that knot in my stomach, the absolute best thing for me to do is to get lost in the kitchen.  Just forget about it all and be in the moment.  And my favorite thing to cook when I want to get ‘lost’ is soup!

Chicken and Butternut Squash Soup is the product of some stress-busting cooking.  I love cooking soup because I can wing it, and it almost always works out.

Throw in a few veggies, maybe some protein, stock and spices, and let-er simmer away.

Turn up the music, belt out some lyrics into my whisk/microphone, and I can feel that knot melting away.

I wanted this to be a very ‘wintery’ soup, since the weather here has been COLD…as in -19°C with windchill today.  This weather definitely calls for some hearty soup.

So leeks and butternut squash it was, and then some chicken because I don’t want Ben asking “where’s the meat?!”  Honestly, you can leave out the chicken and it will still be a super-flavorful and filling soup.  But you probably don’t want to skip the bacon…because: BACON.

The leeks are sauteed in olive oil, and this is what sets this soup apart for me.  And leeks + butternut squash + bacon is a match made in heaven <–but you knew that part because everything goes with bacon 😉

So if you have any stomach knots that need untangling, make this soup!  Stress-Busting Chicken and Butternut Squash Soup.  Should I change the title?

Chicken and Butternut Squash Soup

A hearty and delicious soup that simmers chicken, butternut squash and leeks in a super flavorful broth. Topped with bacon.

Ingredients
  • 2 tablespoons olive oil, divided
  • 6 boneless, skinless chicken thighs, cut into 1 inch cubes
  • 3½ cups leeks, chopped {2-3 leeks depending on the size of your leeks}
  • 4 cloves garlic, minced
  • 2 tablespoons sherry
  • ½ of a butternut squash cut into ½ inch cubes {approximately 3½ cups}
  • 1 carrot, chopped
  • 1 rib of celery, chopped
  • 1 bay leaf
  • 6 cups chicken stock
  • salt and pepper (to taste)
  • 4 slices of cooked bacon, chopped into small pieces
  • 2 tablespoons chopped parsley
Instructions
  1. In a large pot, heat one tablespoon of olive oil over medium heat. Add the chicken, and cook for 5-8 minutes, until cooked through. Set chicken to drain on a paper towel-lined plate.
  2. Add another tablespoon of olive oil to the pan. Add the leeks and cook until wilted, 5 or so minutes.
  3. Add the garlic to the pan and cook for one minute.
  4. Add the sherry and cook for one minute.
  5. Add the butternut squash, carrot, celery, bay leaf and chicken stock. Add back the chicken. Cook for 20 or so minutes, until veggies are soft and cooked through.
  6. Taste and add salt and pepper to taste (I didn't need to add any salt to my soup, and don't forget the bacon will add some seasoning).
  7. Serve with a tablespoon of chopped bacon and a sprinkling of parsely.
